Dutch Baby

If you google this recipe online, you’ll find multiple ways to make it that vary the amount of one ingredient or another. This is the one I use but there are plenty of others to try if you’re looking for variety.

Uses (2) #8 skillets to serve 4.

Preheat oven to 400 degrees. Once hot, place pans in oven to heat for 5-10 min.

6 eggs

1 cup flour

1 cup milk

1/2 tsp salt

3 TB sugar

1 tsp vanilla

3-4 TB butter (for pans!)

Combine all the ingredients (not butter) in blender or similar until smooth.

Remove pans from oven and place 1/2 of butter in each pan, swirling to coat.

Pour half of batter into each pan. Bake on low/middle rack for 15 min, checking to make sure they don’t burn.

They are done when they’ve puffed up, have lightly browned, and middle looks done (can test with knife).

Top with berries, fruit, Nutella, syrup, powdered sugar, cinnamon/sugar, etc.
