Beat 3 eggs in a bowl, blender, or Ninja for 1-2 minutes until bubbly.
Add 2 cups of milk and 2 TB melted butter.
Add 1 1/2 cups of flour, 3 TB sugar, and 1/2 tsp. salt. Mix thoroughly until combined.
Heat cast iron griddle to medium heat. Put a little butter on pan and swirl around to coat.
Pour about 1/3 cut of batter into pan and immediately swirl to make thin circle. It’s all about technique and takes practice. You’ll find batter amount varies according to size pan.
Cook til lightly done, then flip over to cook briefly on other side.
Place on holding plate or in oven that’s been heated to low and turned off. Cover to keep from drying out.
Makes approx. 10-12 pancakes. Serve with fresh fruit, syrup, jams, Nutella, or savory ingredients like cheese and ham.
